Ok this is my wife's s-14 (95) stock and auto transmission.

I dove it for an hour yesterday Highway and surface roads and the temp gauge never climbed above the "C".

The cabin temp never really gets hot either. I checked the coolant level is full.

Could this be a bad thermostat? Or does it need a good flush? I've never had problems with 240's not getting hot,
It's always been too hot and blowing up radiators.

heater core clogged up maybe?

Is it cold or is it just saying it's cold? Meaning... are you getting good heat in the cabin?

Car running cold is usually low coolant (temp sensor reads cool because of air bubbles), or the thermostat is stuck open. Less likely, but common to 240s... the car is perfectly warm and the system full, but the temp sender has a loose connection. Some of them have the blade for the connector riveted on and it can come loose or the wire develops a break close to the connection due to vibration.

Oh yeah it was the thermostat.

It was only 20 degrees when I left work so I knocked it out real quick.
